Stovetop smoking works best with smaller cuts — nothing over about 4 pounds. Good candidates include a whole chicken, chicken pieces, fish, pork tenderloin, or a small beef roast or steak. Larger cuts like brisket, pork butt, or whole turkey take long enough that they’re better suited to a dedicated outdoor smoker — though you can smoke them partway on the stovetop and finish them in the Instant Pot, as with stovetop-smoked brisket.
